Cooking Video Contest Winners!
Drumroll please… the MDF cooking contest winners are in, and it’s a tie! We received so many fantastic submissions, but our esteemed judge has narrowed them down to two winners: Dean Sage for his Roasted Red Pepper Soup and Jay Jones for his Vegetable Omelette! Our judge, Sara Kevern, RD, CNSC, Clinical Dietician at the Stanford Health Care Neuromuscular Center, analyzed all the submissions for nutritional value, production level, and creativity. You can see a nutritional breakdown of both winning recipes below:
Dean Sage - Roasted Red Pepper Soup
Compatibility - Dysphagia 1, 2 and 3 diets
Analysis: This soup is very high in vitamin C, antioxidants, fiber, and is overall low calorie. It is a good source of fat from the olive oil and feta, but is low protein and carbohydrate. This recipe is appropriate for people with diabetes. Tip: Add chickpeas or cooked ground meat prior to blending for additional protein.
Jay Jones - Omelette
Compatibility: Dysphagia 2 and 3 diets.
Nutrition Overview: This is a very high protein, low carbohydrate meal. It is a good source of micronutrients and fiber from the vegetables used. This meal may be high in sodium if ham and cheese are added, but it is appropriate for people with diabetes. Tip: Add a fruit smoothie on the side for more carbohydrate.

The Cooking Video Contest was launched during MDF's Friday Afternoon Webinar Series on Friday, May 1st at 12 PM PST. This webinar, Food Preparation for the DM Community presented by Dr. Leslie Krongold, covered a basic understanding of adult nutrition, dysphagia (swallowing difficulties), and food preparation. Dr. Krongold (adult-onset DM1) and her partner, Jessica, demonstrated the tools needed to prepare three simple, nutritious meals for people with chewing and/or swallowing difficulties.

About the Presenter: Leslie Krongold, EdD Dr. Leslie Krongold was diagnosed with adult-onset DM1 in 1998. She joined an MDA support group and within a few months she was asked to facilitate the group. In 2013, Dr. Krongold joined the MDF staff as Outreach Director and launched our international support group program. Dr. Krongold continues to be a support group facilitator in Northern California and has a podcast called Glass Half Full.

Show off your skills and share your best tips and tricks in our Cooking Video Contest. Winners will be selected by a clinical dietician for a chance to a win an Amazon Gift Card!
Learn more about the requirements for your recipe and video below:
- Create a video (5-minutes or less) demonstrating an easy-to-prepare, nutritious, and dysphagia-friendly meal.
- Identify all of the ingredients in your meal with the appropriate amounts, i.e. 1 teaspoon, ½ cup, etc.
- Identify all of the tools used to create your meal.
- If using a smart phone, hold the phone horizontally during video recording
- If you need to edit your video there is iMovie on Apple products.
- Submit your video via Dropbox!
